Active compounds:
Fermentation enhances the conversion of garlic’s specific compound allicin into its active form: S-allyl cysteine (SAC). Oregano and thyme share some key compounds including carvacrol, a key phenol, as well as thymol. Thyme also contains terpenes, flavonoids and saponins, all of which are preserved in synergy by the fermentation process. Clove is a warm, pungent spice whose most potent phytochemical is eugenol.

How to use:
